A wonderful roasted salmon dish served with bruschetta arugula, lemon and capers.

Roasted Salmon

4 skin-on SalmonĀ FiletsĀ (6 oz. Ea.)
2 tbsp. Ouzo or Pernod
1 tbsp. Chopped Fresh Oregano
4 oz. Arugula
2 tbsp. Large Nonpareil Capers
3 tbsp. Kosher Salt
3-4 oz. Parmesan cheese, in one peice
2 tbsp. Lemon Flavored Vodka
2 tbsp. Raw Coarse Sugar
4 Slc Hearty Country Bread
