A west coast favorite, available at our markets. The cashew crust seals in all the flavor of the fish for an easy flavorful dinner!
½ cup – flour
½ cup – ground cashews
¼ cup – hazelnut oil
8 oz – halibut fillet (other firm whitefish work great too! Try Chilean Sea bass!)
- Using a food processor, take the whole cashews and grind till coarsely ground.
- Mix in the flour till thoroughly mixed.
- Rub halibut fillet with hazelnut oil and then drop fish fillet into flour nut mixture.
- Bake at 350° for 15-18 minutes or until golden brown.
