A simply made crust to give your fresh fish that extra burst of flavor.
Ingredients: Yields – 5 Lbs.
20 oz. – Fresh Basil
2 ½ Cups – Mayonnaise
1 ¼ Cups – Grated Parmesan Cheese
1 Tsp – Salt and Pepper
1 ¼ Lbs – Bread Crumbs
In a food processor, add basil and run till chopped.
Add mayonnaise, cheese, salt and pepper and pulse until combined.
Slowly add breadcrumbs until mixture tightens up and becomes consistency of butter.
Use on top of fish when baking for a fresh crust which seals in the flavor.
